Serves: 1

Ingredients:

  • 1 brown rice tortilla
  • ½ avocado
  • 1 egg scrambled
  • small handful of spinach
  • 1 teaspoon chopped basil
  • sea salt and pepper

Instruction:

  1. Warm tortilla in a toaster oven or on stovetop, smear the avocado and sprinkle with basil, salt and pepper, add scrambled egg and spinach.
  2. Fold in half and enjoy!
