Ingredients:

  • 1 20 oz. can crushed pineapple
  • 1 1/2 cups blueberry (fresh or frozen) Optional
  • Squeeze of lemon
  • 2 cups chopped dates or raisins
  • 3 cups oatmeal (quick cook)
  • 1 cup wheat germ
  • 1 cup coconut
  • 1 cup chopped walnuts
  • 3/4 tsp salt
  • 1 tsp. cinnamon
  • 1/2 tsp. apple spice
  • 1 shredded carrot
  • 1 1/4 cups orange juice or pineapple juice
  • 1/4 cup oil

Preparation:

  1. turn oven on 350
  2. Prepared apple slices with cinnamon sugar in a small bowl and place aside.
  3. Combine pineapple, blueberries and dates, lemon in a saucepan. Cook on medium
  4. In a large bowl, mix oats, wheat germ, coconut, walnuts, and salt. Stir in juice and oil.
  5. Press half of the oat mixture in a greased 9×13-inch pan
  6. If adding sliced apples arrange on top of mixture. Next spread the pineapple mixture on top, and then sprinkle on the rest of the oat mixture.
  7. Press down lightly. Bake at 350 degrees for 30 minutes or until lightly browned.
  8. Cool. Cut into squares. Makes 32. or 12 large squares

Optional: Sweetener, blueberries, sliced apples sprinkled with cinnamon sugar.
