Ingredients:
- 1 20 oz. can crushed pineapple
- 1 1/2 cups blueberry (fresh or frozen) Optional
- Squeeze of lemon
- 2 cups chopped dates or raisins
- 3 cups oatmeal (quick cook)
- 1 cup wheat germ
- 1 cup coconut
- 1 cup chopped walnuts
- 3/4 tsp salt
- 1 tsp. cinnamon
- 1/2 tsp. apple spice
- 1 shredded carrot
- 1 1/4 cups orange juice or pineapple juice
- 1/4 cup oil
Preparation:
- turn oven on 350
- Prepared apple slices with cinnamon sugar in a small bowl and place aside.
- Combine pineapple, blueberries and dates, lemon in a saucepan. Cook on medium
- In a large bowl, mix oats, wheat germ, coconut, walnuts, and salt. Stir in juice and oil.
- Press half of the oat mixture in a greased 9×13-inch pan
- If adding sliced apples arrange on top of mixture. Next spread the pineapple mixture on top, and then sprinkle on the rest of the oat mixture.
- Press down lightly. Bake at 350 degrees for 30 minutes or until lightly browned.
- Cool. Cut into squares. Makes 32. or 12 large squares
Optional: Sweetener, blueberries, sliced apples sprinkled with cinnamon sugar.
