Blueberry Breakfast Quinoa

1/4 cup quinoa, dry rinsed thoroughly
1/2 cup soy milk, enriched vanilla
1/4 teaspoon cinnamon, ground
1/4 teaspoon vanilla extract
2 tablespoons nuts, pecans chopped
1 1/4 cups blueberries


1. Place the quinoa and soymilk in a small saucepan over medium-high heat. Bring to a boil, then reduce heat to a simmer. Cook until most of the liquid has been absorbed, about 15-20 minutes.

2. Stir in cinnamon, vanilla, pecans, and blueberries. Serve immediately.
