Ingredients:

  • 2 tbsp olive oil
  • 1 lb ground turkey
  • 2 cups chopped onions
  • 1 cup chopped red pepper
  • 1 cup chopped green pepper
  • 2 cups chopped celery
  • 2 cloves garlic, chopped
  • 2 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 1 tsp salt
  • freshly ground pepper, to taste
  • 1 15 oz can diced tomatoes
  • 2 15 oz cans kidney beans
  • cilantro, to taste (optional)
  • scallions, to taste (optional)

Directions:

  1. Heat the oil in a large pan.
  2. Add the turkey and onions and cook for about 10 minutes or until they start to brown.
  3. Stir in the peppers, celery, garlic, cumin, chili powder, paprika, salt, pepper, tomatoes and beans.
  4. Simmer for 30 minutes.
  5. When done, serve topped with cilantro or scallions.
