Summer Salad

Serves: 4


1 large head of butter lettuce
1 handful of green beans, cut into ¼ inch “coins”
1 shredded beet
1 nectarine or peach, chopped
¼ cup shelled pistachios



¼ cup rice wine vinegar
½ cup olive oil 1 garlic clove, minced
small handful of chopped basil

Hand tear the butter lettuce into a salad bowl. Add the rest of the ingredients and toss with the salad dressing.
