Serves: 4

Ingredients:

  • 1 large head of butter lettuce
  • 1 handful of green beans, cut into ¼ inch “coins”
  • 1 shredded beet
  • 1 nectarine or peach, chopped
  • ¼ cup shelled pistachios

Dressing

Ingredients:

  • ¼ cup rice wine vinegar
  • ½ cup olive oil 1 garlic clove, minced
  • small handful of chopped basil

Instruction:

  1. Hand tear the butter lettuce into a salad bowl.
  2. Add the rest of the ingredients and toss with the salad dressing.
