Ingredients:
- 1 large head of butter lettuce
- 1 handful of green beans, cut into ¼ inch “coins”
- 1 shredded beet
- 1 nectarine or peach, chopped
- ¼ cup shelled pistachios
Dressing
Ingredients:
- ¼ cup rice wine vinegar
- ½ cup olive oil 1 garlic clove, minced
- small handful of chopped basil
Instruction:
- Hand tear the butter lettuce into a salad bowl.
- Add the rest of the ingredients and toss with the salad dressing.
