Quinoa Almond Butter Balls

Makes 4 servings; 150 calories per serving

Ingredients:

1/2 cup almond butter
1 cup puffed quinoa
1 tsp vanilla extract

Directions:

Combine all the ingredients in a large bowl and mix together.
The mixture is hard to roll into balls so pop it in the fridge for 20 minutes until it’s firm.
When ready, line a container with baking paper and using a spoon to measure, roll into little balls.

 

(Note: Best for snack post-dinner to help unwind at the end of the day.)
