Ginger-Mint Tropical Compote

Ingredients:

3 large oranges
1 (20-oz) can pineapple chunks in their own juice, drained
1/4 cup flaked coconut (unsweetened if available)
1/4 cup thinly sliced fresh mint
1 Tbsp. fresh lime juice
1 Tbsp. grated fresh ginger

Directions:

Peel the oranges and section them, working over a bowl to catch any juice. Add the orange sections and juice to a serving bowl with the remaining ingredients. Mix gently. Cover and refrigerate for 30 minutes before serving.
