Makes about 6-8 tacos
1 rotisserie chicken, shredded (not during phase 2)
2 teaspoons cumin
1 teaspoon garlic
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 package of sprouted corn tortillas – Food for Life brand is great.
1 avocado, sliced
1/4 of a head of green cabbage, finely sliced
1 green onion
Handful of cilantro, chopped
Juice of one lime
2-3 tablespoons of olive oil
Put the shredded chicken in a bowl and season with cumin, garlic, cayenne and salt. Mix and set aside.
Mix everything in a bowl and dress with the lime, olive oil and salt. Assemble the tacos by filling the tortilla with chicken and topping it with the slaw and avocado.
You can also skip the tortillas and serve this on a bed of mixed greens.
