Makes about 6-8 tacos
Ingredients:
- 1 rotisserie chicken, shredded (not during phase 2)
- 2 teaspoons cumin
- 1 teaspoon garlic
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 package of sprouted corn tortillas – Food for Life brand is great.
- 1 avocado, sliced
Slaw Topping:
Ingredients:
- 1/4 of a head of green cabbage, finely sliced
- 1 green onion
- Handful of cilantro, chopped
- Juice of one lime
- 2-3 tablespoons of olive oil
Instruction:
- Put the shredded chicken in a bowl and season with cumin, garlic, cayenne and salt. Mix and set aside.
- Mix everything in a bowl and dress with the lime, olive oil and salt.
- Assemble the tacos by filling the tortilla with chicken and topping it with the slaw and avocado.
- You can also skip the tortillas and serve this on a bed of mixed greens.
