Blueberry Lemon Chia Pudding

Serves: 2

Ingredients:

1 ½ cups unsweetened almond or coconut milk (in a carton, not canned)
¼ cup chia seeds
Zest of 2 lemons
1 pint of blueberries

Mix all ingredients in a bowl and refrigerate for 3-4 hours or overnight.
