Ingredients:
- 3 tablespoons olive oil
- Finely grated zest of 1 medium lemon
- Juice of 1 medium lemon
- Kosher salt
- Freshly ground black pepper
- 5 ounces arugula (about 5 packed cups)
- 2 cups (1-inch) watermelon cubes
- 4 ounces feta cheese, crumbled (about 1 cup)
Instructions:
- Whisk the olive oil, lemon zest, lemon juice, a pinch of salt, and a few grinds of black pepper together in a large bowl.
- Add the arugula and watermelon and toss to combine. Add the feta and mint and toss again lightly.
