Ingredients:

  • 3 tablespoons olive oil
  • Finely grated zest of 1 medium lemon
  • Juice of 1 medium lemon
  • Kosher salt
  • Freshly ground black pepper
  • 5 ounces arugula (about 5 packed cups)
  • 2 cups (1-inch) watermelon cubes
  • 4 ounces feta cheese, crumbled (about 1 cup)

Instructions:

  1. Whisk the olive oil, lemon zest, lemon juice, a pinch of salt, and a few grinds of black pepper together in a large bowl.
  2. Add the arugula and watermelon and toss to combine. Add the feta and mint and toss again lightly.
