Summer Berry Kale Salad

1/4 cup fresh organic lemon juice plus 2 Tbsp zest
1/4 cup apple cider vinegar
1/4 cup maple syrup or local honey
1/3 cup extra virgin olive oil
Sea salt to taste
2 bunches fresh curly organic kale, washed, dried and torn into bite sized pieces
1/4 cup finely chopped fresh organic basil
2 6 oz pkgs organic raspberries
12 oz pkg organic blueberries
2 cups fresh organic sweet white corn kernals
1 cup raw pecan pieces


In a small bowl, whisk together the lemon juice, zest, vinegar, maple syrup, olive oil, and sea salt until well combined. Place the kale in a large bowl and pour the dressing over. Massage the dressing into the kale with your hands until it is all coated. Add the basil, berries, corn and pecans and toss to combine. Serve!
