Ingredients:
- Dressing:
- 1/4 cup fresh organic lemon juice plus 2 Tbsp zest
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup or local honey
- 1/3 cup extra virgin olive oil
- Sea salt to taste
- 2 bunches fresh curly organic kale, washed, dried and torn into bite sized pieces
- 1/4 cup finely chopped fresh organic basil
- 2 6 oz pkgs organic raspberries
- 12 oz pkg organic blueberries
- 2 cups fresh organic sweet white corn kernals
- 1 cup raw pecan pieces
Directions:
- In a small bowl, whisk together the lemon juice, zest, vinegar, maple syrup, olive oil, and sea salt until well combined.
- Place the kale in a large bowl and pour the dressing over.
- Massage the dressing into the kale with your hands until it is all coated. Add the basil, berries, corn and pecans and toss to combine. Serve!
