Ingredients:
- 1 lemon
- 3 cups water
- 1 1/2 cups dry red wine
- 1 cinnamon stick
- 2 cloves
- 2 Tbsp. sugar (or sugar substitute)
- 1 lb. dried apricot halves
Directions:
- Peel the lemon, making long strips of peel and removing as much of the white pith as possible.
- Add the peel to a large saucepan. Cut the peeled lemon in half and squeeze the juice over a fine mesh strainer into the pan.
- Add the water, wine, cinnamon stick, cloves, and sugar. Bring to boiling. Reduce the heat to simmer and cook for 15 minutes.
- Add the apricots. Simmer for 5 minutes.
- Pour the wine-apricot mixture into a serving bowl, cover, and refrigerate for 2 to 3 hours. Discard the cinnamon stick and cloves before serving.
