Ingredients:
- 1 large Portobello mushroom, brush with olive oil and grill or sauté until slightly charred. This can be done in advance.
- 1 – 2 tablespoons hummus
- 4-5 cucumber slices
- sliced red onion
- chopped kalamata olives
Spread hummus on Portobello mushroom, top with rest of the ingredients and enjoy!
