Ingredients

  • ¼ watermelon, one large vertical slice
  • ¼ c greek yogurt or coconut cream
  • 8-10 blueberries
  • 6 raspberries
  • 5 strawberries, halved
  • 4-6 blackberries
  • 2 sprigs fresh mint, chopped
  • 1 tbsp unsweetened, shredded coconut
  • optional: 1 tbsp honey

Instructions

  • Cut a large piece of watermelon vertically, this will be the base of the ‘pizza’.
  • Spread greek yogurt evenly across the watermelon. you can also add some honey to sweeten it up; or use whipped coconut cream instead of greek yogurt.
  • Top with berries or fruit of your choice, sliced as needed.
  • Add any additional toppings, like mint leaves, shredded coconut or grated chocolate.
  • Cut into triangle-sized ‘pizza’ slices and enjoy!
