Ingredients:

  • Vinaigrette
  1. 2 Tbsp. champagne vinegar (or white wine vinegar)
  2. 1 Tbsp. fresh lemon juice
  3. 1/4 cup walnut or olive oil
  4. 2 tsp. fresh chives, minced
  5. 1 tsp. honey
  6. 1/4 tsp. sea salt
  7. 1/4 tsp. freshly ground black pepper
  • Salad
  1. 6 cups (about 5 oz) winter greens of choice (such as spinach, arugula, and chopped romaine)
  2. 1/2 cup fresh pomegranate seeds
  3. 2 Tbsp. crumbled blue cheese
  4. 1 Tbsp. chopped pistachio

Directions

  1. In a small bowl, whisk together the vinaigrette ingredients and set aside.
  2. For the salad, divide the greens among 6 serving plates. Sprinkle the greens with the pomegranate seeds, blue cheese, and pistachios.
  3. Drizzle with the vinaigrette.

Note: Ruby-red pomegranate seeds are delightful sparks of sweet crunch in this elegant holiday salad. Tip: Many grocery stores offer already prepared pomegranate seeds.
