Ingredients:

  • 1/2 cup almond butter
  • 1 cup puffed quinoa
  • 1 tsp vanilla extract

Directions:

  1. Combine all the ingredients in a large bowl and mix together.
  2. The mixture is hard to roll into balls so pop it in the fridge for 20 minutes until it’s firm.
  3. When ready, line a container with baking paper and using a spoon to measure, roll into little balls.

(Note: Best for snack post-dinner to help unwind at the end of the day.)
